Chickpea Green Salad with Ginger dressing
Salad:
1 bag Salad Greens (spinach, kale, spring mix, etc)
1 Avocado
1 seedless cucumber
1 red bell pepper
¼ cup chopped artichoke hearts
1 can chickpeas rinsed
Dressing:
1 tbsp olive oil
1 tbsp sesame oil
½ - 1 lime (juiced)
1 tsp Agave maple syrup
1 tsp Dijon mustard
½ tsp minced garlic
½ tsp freshly grated ginger*
¼ tsp Turmeric**
Salt + Pepper
Chop the salad greens of your choice. Chop the rest of the vegetables so they are similar in size (bite sized). Toss together with rinsed chickpeas.
Whisk together all dressing ingredients. Taste along the way!
Toss everything together until salad is evenly coated with dressing.
*Freshly grated ginger is preferred here. Tip: when you buy ginger, cut it up into smaller portions and freeze. Frozen ginger grates beautifully.
**Turmeric is not for everyone! Feel free to omit if you are not a fan.
